Featuring organic flours from The Mill at Janie’s Farm in Ashkum, IL,
Perennial Baker’s 312 Sourdough is made of 3 flours, with 10% rye, 20% whole wheat and the rest bread flour. They add water and Kosher salt along with their almost 40-year-old starter to make this tasty everyday sourdough that’s full of flavor and not too sour. Baked in a pan loaf so the crust is nicely chewy but not tough and each slice is ready for toasting or a sandwich.

Trained in the bread program at the French Pastry School in Chicago, founder & professional baker Rosemary Lapka honors and builds on classic bread recipes and techniques to showcase many local and organic ingredients. A lifelong baker, Rosemary began producing
her own sourdough breads after finding that her body responded better to the slow
fermentation of naturally leavened breads with simple ingredient lists. She delights in
