Cooking suggestion: Coat bottom of 3-qt. pan with 3 Tbsp. high-heat oil. Place over medium-high heat. Once hot, add 1/3 c. kernels; cover with tight-fitting lid. Cook, shaking pan occasionally, until there are more than 3 seconds between pops. Pour into a bowl. Sprinkle 1 tsp. Maple Ramp Seasoning over popcorn. Stir to coat evenly. Makes about 8 cups of popped popcorn.
Funks Grove is well known for its rich sugar maple forest, but that forest is also home to a robust colony of native ramps. Ramps are a native species of onion, Allium tricoccum, that emerge in the spring as the maple sirup season begins to wind down. We harvest just the leaf tops to leave their roots completely intact, and turn it into a fine, bright-green powder. This seasoning is a real "taste of the grove" and is a testament to the health and bounty of these old forest soils.
